The Vina Echeverria Reserva Chardonnay is made from 100% Chardonnay that comes from a single plot of ungrafted, selected clones of pre-phylloxera French rootstock. The grapes are hand picked and put in 18 kg boxes to be carried to the winery immediately after being cut. Whole clusters are pressed, and half of the wine is fermented in 225 L French oack barrels, and the other 50% in stainless steel vats for 25 days with selected yeasts. The wine undergoes partial malolactic fermentation and is then aged in 225 L French and American oak on its fine lees for 4-6 months.
