The Vina Echeverria Reserva Pinot Noir is made from 100% Pinot Noir comes that from a single plot of ungrafted, selected clones of pre-phylloxera French rootstock. The grapes are hand picked and put in 18 kg boxes to be carried to the winery immediately after being cut. The must undergoes cold skin maceration for 4-5 days before being fermented in stainless steel tanks for 10-12 days at controlled temperatures with selected yeasts. There is a further maceration for 5 days after fermentation. 75% of the wine is aged in oak barrels for six months.
