Vina Echeverria Reserva Sauvignon Blanc is made from 100% Sauvignon Blanc that comes from a single plot of ungrafted, selected clones of pre-phylloxera French rootstock. The grapes are hand picked and put in 18 kg boxes to be carried to the winery immediately after being cut. The bunches are destemmed and the grapes undergo 2 – 4 hours of skin contact maceration at low temperatures. Only the free run juice from a pneumatic press is used. The wine is fermented in stainless steel tanks for 25 days and stored on its fine lees for 2 months. The wine is then stored in stainless steel tanks before being bottled.
